From the Philippines
The 'Goldilocks zone' for cocoa growing is 10 degrees either side of the equator and The Philippines is our only cocoa origin that sits in the northern hemisphere. The farming of cocoa is still relatively new to the region and many farms are so small that they don't yet have their own fermentary. Mindanao Island is in the south of the archipelago, and the cocoa we buy directly from our farmer grows on the fertile, volcanic soil slopes between Mount Apo and Davao city.
