For a more intense cocoa hit, our Philippines, Mindanao Island 50% takes milk chocolate to the next level with a rich brownie undertone with notes of honey and citrus.

Based along the north coast of the volcanic island of Guadalcanal, our farm is a family affair of a husband and wife team along with four sisters, each playing a part in the cocoa production.
With education a legal requirement to the age of 16 in the Solomon Islands, it's late afternoon when their playful shouts can be heard on their return from school as they pass bar the fermentation beds just metres from the houses.
The closeness of the fermenting process allows the family to stay committed to solar drying - as long as you're quick, the beans can be covered whenever a squall rushes over from the south seas.
By contrast, the fermentary on Mindanao Island in the Philippines, is shared among a number of multi-crop small holders who grow their cocoa alongside a host fresh fruits and vegetables like pineapple, coconut, and yams.
Mindanao itself is the southernmost of the larger islands in the Philippines group and the only one of our origins to be found north of the equator. The cocoa we buy directly from our farmer grows on the slopes between Mount Apo and Davao city in the fertile volcanic soils and tropical rainforest-like conditions.
