The farm-holdings that grow our cocoa beans amongst durian and lemon trees are particularly small and the farmers prefer to sell their harvested beans to the cocoa centre in Calinan. There the beans are box-femented before being dried in the sun.
Our cocoa is grown in the north of the island. This sheltered side is known locally as Tasi Mate (dead sea) since it does not experience the large sea swells seen along the south coast. The fertile, volcani soil comes from Gallego, a series of extinct volcanic cones.
