The cocoa we buy grows close to the northeast coast of the island, with its volcanic soils and idyllic beaches. The cocoa industry has grown well on this island in the last 20 years, and we can see why, as the cocoa is interesting and complex.
One half of the Hispaniola island, the shores of Dominican Republic are washed by the Atlantic to the north and the Caribbean to the south. Three, now extinct, volcanoes provided rich, fertile soil for cocoa that's grown under the leaves of citrus, banana and avocado trees.
