The fermenting of our cocoa beans from Guadalcanal, the largest of the Solomons islands, takes place just 50 metres from our famer's house and the particular aroma permeates the air during harvest season.

Drying the beans with the heat of the sun, and not fire-drying, allows the true flavours inherent in the cocoa bean to come through but has its own challenges - not least the showery squalls that are known in this Pacific region.

A quick dash to cover the beans is all it takes to ensure our commitment to sourcing the finest cocoa beans is honoured.
