Paul A Young’s Super Fudgy Dark Chocolate Brownies

Paul: “This is probably the only brownie recipe you will ever need and you will want to share it. 😍😍 They are super fudgy and without any dryness or crumby-ness! My gift to you. 🎁🎁🎁”

INGREDIENTS
100g unsalted butter
250g caster sugar
75g golden syrup
1tsp sea salt
4 medium free-range eggs
275g of any from Firetree’s dark chocolate couverture collection (69% cocoa or above)
70g plain or gluten-free plain flour

Ice-cream or crème fraiche, to serve


METHOD

1 Fully line a 7-inch x 10-inch (17cm x 25cm) baking tin with non-stick baking paper (see Top Tips)

2 Melt the butter and sugar in a saucepan over a low heat. Then stir in the golden syrup and sea salt and bring it to a bubble.

3 Turn off the heat and add in the Firetree Chocolate couverture. Stir continuously until it’s really smooth and the chocolate has fully melted.

4 Preheat the oven to 175c/Gas Mark 3½

5 Add in the eggs all in one go - no need to even beat them - and mix until you have a smooth batter, this will take 2-3 minutes.

6 Stir in the flour until just mixed in, don’t overmix as you don’t want a tough batter. Pour into your prepared tin and - here’s the secret - tap the tray really hard on the counter to level out the batter and get rid of most of the bubbles.

7 Bake for 25-30 mins or until you can press the top with your hand. It should have a slight wobble to it.

8 Leave to cool, in the tin, then chill it in the fridge overnight. Trim off the edges and cut into 9 squares using a hot, wet knife for those Instagramable edges. 😳😳😳

9 Serve with ice-cream or crème fraiche for the ideal summer BBQ dessert. 


Top Tips

·       Don’t worry if your tin is smaller, just bake for a few minutes longer, if the middle is still too soft after 25 to 30 mins.

·       Crumb the brownie edge trimmings and stir into softened vanilla ice-cream for brownie-crumb iced dessert or as the perfect base for a decadent milkshake.   

·       I love the Solomon Islands 69% cocoa couverture for this recipe as the taste notes of red fruit and citrus compliment the fudginess of these brownies perfectly.
